Homemade ice cream without an ice cream maker

3 simple recipes for summer refreshment

Homemade ice cream is easier than many people think – and you don't even need an ice cream maker. With just a few ingredients and a hand blender or mixer, you can conjure up creamy frozen yoghurt and refreshing popsicles in no time at all, which are not only perfect for combating the summer heat, but also packed with valuable nutrients. In this article you will find three uncomplicated recipes.

Mango-coconut smoothie ice cream

Exotic, rich in beta-carotene and selenium
 

You need: 

Blender and container or mixer, knife, chopping board, ice cream moulds, wooden sticks
 

Ingredients for the popsicles:

  • 1 ripe mango
  • 100 ml coconut milk
  • 1 squeeze of lime juice


This is how it's done:

Remove the mango flesh from the stone, cut into small pieces and blend together with the other ingredients to make a smoothie. Pour into ice cream moulds or small glasses. Freeze for at least 4 to 6 hours. Leave to thaw for 5 minutes before removing or briefly run warm water over the moulds. 
 

Tip: If you don't have ice cream moulds to hand or don't want to use plastic, you can also use small (preserving) jars. Make sure that the jar does not become narrower towards the opening so that the finished ice cream can be removed. To prevent the jar from shattering during freezing, do not fill it to the brim and do not close it with a lid. It is best to allow the mixture to freeze slightly before inserting the stick. So it doesn't fall over.

Frozen yoghurt with berries

Tart and refreshing, scores with calcium and antioxidants


You need: 

Blender and container or mixer


Ingredients for 2 portions:

  • 250 g frozen berry mix
  • 250 g natural yoghurt or Greek yoghurt
  • 50 g fresh berries
  • Optional: 4 tbsp honey


This is how it's done:

Place the berry mixture and yoghurt in a blender and blend until smooth. If you like, add some honey. Pour the frozen yoghurt into two cups, garnish with the fresh berries and enjoy immediately.

Peanut milk ice cream

Mildly nutty, lactose-free and low in fructose


You need: 

Blender and container or mixer, ice cream moulds, wooden sticks


Ingredients for the popsicles:

  • 200 ml lactose-free milk or almond drink
  • 1 tbsp peanut butter without additives
  • Optional: Vanilla or cinnamon, a little sugar or other sweetener


This is how it's done:

Mix all the ingredients together until lump-free, pour into ice cream moulds and freeze for 4 to 6 hours.
